Overview
This is a basic technique for finely dicing onions or shallots. Use a paring or chef's knife, which has a larger blade. Once diced, onions or shallots can be used in a wide variety of dishes. While a simple technique, using your knife with the dexterity of a chef requires a great deal of training.
